Have a Salad (Melon and Prawn Salad)

Yeah I know right, Salad is good for your health and when the weather is hot too, so this is what I had yesterday and it tasted nice, couldn't share the plate so I share a recipe. Follow me:

1 Honeydew melon, halved, seeded and cubed.
175 g peeled prawns.
300 ml Mayonnaise.
2 x 15 ml spoons tomato puree.
1 x 15 ml spoon grated lemon rind.
1 x 5 ml spoon caster sugar.
Salt (a pinch).
Fresh ground white pepper.
Lettuce leaves.

The Mix

Mix the Melon pieces with the peeled Prawns.
Mix together the Mayonnaise, Tomato puree, Lemon rind, Sugar and Salt and Pepper to taste.
Add the Melon and Prawn mixture and stir to mix.
Now arrange the Lettuce leaves on a serving dish and pile the Prawn and Melon mixture in the centre.

TIP
If you have whole unpeeled Prawns and Watercress springs then you can use that to garnish your salad. Enjoy!!
